The Vat Room Operator is responsible for transferring edible liquid egg according to USDA and company specifications, ensuring all tanks and tankers are cleaned and sanitized, and accurately documenting all processes. This role also handles inedible product removal.
Responsibilities
- Coordinate with USDA for all tanker cleaning and liquid egg transfers for shipment
- Check paperwork accompanying tankers and document on the Tanker Receiving Log
- Inspect physical condition of incoming tankers (cleanliness, temperature, smell) and take corrective action
- Take samples to the lab for testing
- Control flow of egg via computer panel, flow boards, and piping in silo areas
- Set up transfers by hooking sanitized unloading hoses and unloading product to proper silos or tanks
- Ensure empty tanks and tankers are cleaned by the Clean in Place (CIP) System
- Communicate with the Cooked Department regarding edible egg transfers
- Mix liquid egg product with ingredients
- Assist in coordinating tanker shipments
- Control the bulk receiving of chemicals
- Ensure general good housekeeping for the area
- Control the flow of inedible egg product to the inedible tanker bay
- Monitor augers and machinery in the shell room for proper operation
- Monitor chemical pumps, ensuring they are filled and working properly
- Clean transfer room floors and machinery, and empty bad egg barrels
- Clean tankers
- Perform data entry and required paperwork
- Fill in at all positions in the transfer room as needed
- Adhere to safe work practices, GMP, HACCP guidelines, and maintain sanitary conditions and product quality
Requirements
- High school diploma or GED equivalent
- Ability to read, comprehend, and write simple instructions and correspondence
- Ability to add, subtract, multiply, and divide whole numbers, fractions, and decimals
- Ability to compute rate, ratio, and percent and interpret bar graphs
- Ability to apply common sense understanding to carry out instructions
- Knowledge of production flow, mixing, USDA and Company standards, and the CIP system
- Strong mechanical ability
- Good reading and writing skills with ability to follow written and verbal instructions
- Strong attention to detail
- Ability to work well with others and have good communication skills
- Ability to work in wet environment with changing temperatures (indoors and out)
- Ability to lift up to 50 lbs. safely
- Ability to climb onto tankers using a safety harness
- Ability to work with chemicals safely
Qualifications
- High school diploma or general education degree (GED) or equivalent
- Approximately 1-year experience in the Breaking Department with cross training in the tanker bay area under close supervision
