This role is responsible for leading the beverage program across Legends Global venues by focusing on education, menu development, profitability, and managing supplier relationships. The director will ensure high standards in beverage service, enhance guest experience, and integrate sponsor obligations.
Responsibilities
- Develop and deliver comprehensive beverage training for F&B teams, focusing on product knowledge, sales, service, and operational success.
- Manage online training programs and support certifications for additional learning.
- Partner with preferred vendors to schedule on-premise training sessions.
- Ensure compliance with federal, state, local, and Legends' alcohol service regulations.
- Oversee the implementation of corporate beverage programs and tailor local offerings for guest engagement.
- Develop beverage recipes with clear, concise instructions for operational execution.
- Collaborate with vendors and marketing teams to design beverage concepts aligning with local opportunities and sponsor commitments.
- Set pricing and manage pour costs to achieve targeted profitability goals for each venue.
- Provide operational teams with tools and procedures to manage beverage costs and maximize profitability.
- Establish and track KPIs to measure and improve beverage program performance.
- Manage high-end spirit and wine allocations across venues, optimizing premium selections.
- Foster strong relationships with suppliers, distributors, and sponsors.
- Serve as a liaison with the VP of Beverage, supporting property openings and new program launches.
- Integrate sustainable practices into beverage programs, including local sourcing and waste reduction.
- Develop innovative non-alcoholic and low-ABV offerings reflecting industry trends.
Requirements
- Strong knowledge of wine, beer, and spirits
- Extensive knowledge of alcohol laws and compliance requirements across multiple jurisdictions
- Demonstrated leadership and customer service skills
- Proven track record of building and motivating successful teams
- Excellent written and verbal communication skills
- Experience managing supplier and sponsor relationships and driving measurable results
- Proficiency with accounting policies, POS systems, and beverage cost management
- Skilled in cross-functional collaboration with culinary, marketing, and operations teams
- Entrepreneurial mindset with the ability to create and manage new initiatives
- Strong organizational and problem-solving skills
- High attention to detail and the ability to work independently
- Flexible schedule; able to work extended hours, nights, weekends, and holidays
