Manage the daily operations of the kitchen production, ensuring high-quality food preparation, adherence to safety standards, and efficient team performance. This role involves supervising staff, controlling inventory and wastage, and developing new products for a large Asian specialty supermarket.
Responsibilities
- Manage kitchen production processes and overall working environment
- Manage team performance, execute disciplinary actions, and provide specialized training to staff
- Monitor production efficiency and evaluate productivity levels during work in progress
- Prepare, handle, clean, cut, marinate, cook, and produce assigned food products (BBQ, Hot Food, Dim Sum, Sushi, etc.) based on orders received
- Ensure recipes, ingredient specifications, quantity, quality, and cooking times adhere to SOPs
- Perform proper receiving, quality, and inventory checks, and wastage control
- Manage product quality, food safety, freshness, and ensure FIFO is strictly practiced
- Ensure food is properly stored and handled, and all temperature records are completed
- Maintain cleanliness, hygiene, equipment, tools, and workplace safety, handling waste properly
- Develop and launch products for special events to excite customers
Requirements
- 5 years and/or above relevant experience
- Knowledge, skills, and prior experience in making Kitchen products (BBQ, Hot Foods, Dim Sum, Sushi and/or others Semi-finished Products)
- Knowledge and experience in supervising Kitchen production workflow and controlling cost and wastage
- Well versed with workplace health and safety protocols
- Good understanding of tools & equipment relevant to the job and ability to interpret labels of merchandises
- Basic computer skills in MS Office
- Willingness to work flexible shifts, including weekdays, weekends, evenings, and statutory holidays
- Great organization, problem-solving, interpersonal and customer service skills
- Ability to work both independently and collaboratively within a team
Qualifications
- 5+ years of relevant experience, with at least 3 years of supervisory experience preferred
Nice to Have
- Proficiency in Chinese (Cantonese and/or Mandarin)
- 3+ years of supervisory experience
