About This Role

Manage and lead the Bakery Production team at Central Market, ensuring efficient production schedules, high-quality products, and superior customer service. Oversee daily operations, inventory, and merchandising to meet sales and budget goals.

Responsibilities

  • Exercise independent judgment in making employment-related and business decisions, or effectively recommend such decisions
  • Conduct interviews, performance reviews, Partner feedback, and training for the team
  • Develop and lead a team to provide the highest level of customer service
  • Ensure production schedules and quantities meet forecasts and maintain optimum product quality and presentation
  • Support Bakery Manager with daily and weekly duties including forecasting and production planning
  • Effectively manage product waste and monitor product assortment, shrink, labor, and wrap expenses to meet budget goals
  • Support product ordering and inventory controls with the order writer
  • Ensure appropriate planning to meet weekly and long-term budget goals
  • Merchandise department to maximize sales, ensuring appropriate abundance and effective promotion
  • Maintain multiple vendor relationships
  • Ensure all government and company regulations for product freshness, safety, refrigeration, and sanitation are met
  • Oversee the organization and rotation of coolers

Requirements

  • Proven experience in Bakery production
  • Experience managing teams of at least 10 bakers
  • Experience training new bakers to achieve proficiency
  • Experience in planning production and sanitation standards
  • Ability to troubleshoot recipe/product issues

Qualifications

  • Proven experience in Bakery production, experience managing teams of at least 10 bakers, and experience training new bakers

Nice to Have

  • Tortilla production experience
  • Graduation from a Baking/Pastry school
  • Pastry knowledge (Buttercream/Icings, cooked Creams and curds, Pate a choux, Sponge and Cheesecakes)
  • Experience working with rack ovens, kettle, 80 to 140qt Mixers (Pastry)
  • Bakery/Bread knowledge (European style baking using complex preferment like Levain, Sponge/Poolish)
  • Experience working with Deck ovens, rack ovens, bread divider, bread divider rounder (Bakery/Bread)
