The Sushi Cook supports the culinary leadership team by ensuring the sushi bar and equipment are in good working order, maintaining cleanliness, and preparing various sushi and sashimi dishes according to recipes and standards.
Responsibilities
- Directly support the Executive Chef, Asst. Executive Chef, Room Chef and Asst. Room Chef
- Ensure that the Sushi Bar and equipment are in good working order
- Maintain cleanliness, safety and sanitation standards
- Support Chefs in trimming, cutting, slicing fish and vegetables
- Make rolls, sushi and/or sashimi dishes
- Prepare sauces by following recipe and SOP
- Maintain cleanliness of area
- Keep cold items stocked
Qualifications
- Minimum of one to two years Sushi Making experience in a high volume restaurant preferred
