About This Role

Lead and manage the culinary team, ensuring high standards of food preparation, kitchen cleanliness, and financial control. This role is crucial for developing the team's skills and contributing to exceptional guest experiences at The Belgrove Resort.

Responsibilities

  • Attract, retain, and motivate culinary talent
  • Complete daily ordering for all outlets, employee cafeteria, and banquets in the absence of the executive chef
  • Perform any function within the culinary department (cook, steward etc.) as needed
  • Conduct daily walk-throughs of the kitchen, making recommendations for corrections, repairs, cleanliness, and improvements
  • Conduct daily team meetings to communicate pertinent information and guide preparation
  • Attend weekly F&B meetings, BEO meetings, leadership meetings, and monthly safety meetings, representing the culinary team
  • Manage department finances, analyze and control costs, and manage the budget for profitable operations
  • Maintain thorough knowledge of food allergens and handle guest food allergies with urgency
  • Work with the culinary team to ensure prep sheets are updated and properly used daily
  • Guide the nightly cleaning of all kitchen areas and follow up with PM stewarding crew for cleanliness and organization
  • Assist the Executive Chef in the creation, costing, and implementation of seasonal and special menus

Requirements

  • Familiarity with basic and advanced cooking methods
  • Ability to work long hours including weekends and holidays
  • Basic allergy knowledge
  • Full knowledge of correct cooking temperatures for vegetables and proteins
  • Possession of cutting tools and a calibrated food grade thermometer
  • Full knowledge of state's health codes and eco sure food safety and health report
  • Strong organizational skills
  • Ability to work independently
  • Able to be on your feet for long periods of time
  • Able to lift at least 50 pounds
  • At least 21 years of age

Qualifications

  • College graduate in the culinary arts
  • 3+ years experience as a cook in a high volume professional kitchen
