Manage all aspects of special diet food production in a summer camp kitchen, ensuring compliance with food safety for allergens and dietary restrictions while supervising culinary staff. This is a seasonal, hands-on role requiring relocation to the camp.
Responsibilities
- Execute the Wolfoods Camp Food Service Program, creating dishes for a multitude of dietary restrictions and allergens.
- Plan recipes, execute cooking, and implement strict sanitation practices to avoid cross-contamination for special diets.
- Facilitate the culinary needs of the assigned camp, ensuring correct service timing, food quantity, and quality.
- Communicate professionally and effectively with children, staff, and diners.
- Perform skilled scratch-made food production and supervise/coach support staff.
- Control inventory and assist in assembling orders.
- Uphold Wolfoods Standards of Service & Quality, including in-depth understanding of Food Safety for special diets.
- Identify the Big 9 Allergens in food and communicate effectively with others.
- Manage staff, plan, schedule, direct, and train kitchen personnel.
- Follow the comprehensive Wolfoods Camp Food Training Program and attend related in-service training.
Requirements
- 2+ years Commercial Kitchen Experience
- Proficient in relevant skills relating to specific role
- Quality Driven
- Ability to self-motivate
- Ability to lead a team & take direction
- Minimum 6-day 70-hour work week availability
- Ability to live on-site in a rural setting with shared living spaces
- Ability to work under pressure and in various temperatures
- Ability to stand for long periods, lift 50 pounds, bend, stretch, and reach
- ServSafe Allergens Certification (company sponsored)
- Ability to identify the Big 9 Allergens and communicate effectively
- Ability to cook from scratch with minimal supervision
- Ability to take a menu and create multiple versions for dietary needs
